Healthy Strawberry Pearl Sorbet

Homemade sorbet is perfect for cooling off on a hot summer's day. A sorbet is basically blended fruit that's sweetened, then frozen. This sorbet is sweet, creamy, with a slushie-like consistency, light, refreshing, and delicious. And it is ridiculously easy to make.

You can use any kind of fruit you like! Strawberries, raspberries, mango , peach, blueberries, kiwi fruit, cherries, blackberries all work well! Sorbet usually contains lots of sugar, but this is a healthy sorbet made strawberries, honey, pearl protein powder and vanilla.

Healthy Strawberry Pearl Sorbet

Ingredients:

1/2 tsp 100% Pure Pearl Powder
8 oz fresh or frozen strawberries
1 tsp vanilla extract
3-4 tbsp honey or orange juice (if you prefer less sweet)
lemon juice

If using fresh strawberries, place them on a paper-lined baking tray, spread them out in a single layer, and freeze them.

Instructions

2. Once frozen, in a food processor or and ice crushing blender, (You just need a blender or processor that can break down the frozen fruit.) pulse the crushed fruit into small pieces, add the honey, one Tbsp at a time while pulsing to create a smooth sorbet-like paste. If using a blender, use it in short bursts as the blades heat up and could melt your sorbet. The smaller the fruit pieces the faster it will puree. Just keep an eye on it to make sure it doesn't melt.

3. Add vanilla, pearl powder and lime juice, and run the blender until completely mixed.

4. Freeze for at least a couple hours until the sorbet has hardened.

5. Let the sorbet sit out for a few minutes, then scoop into serving bowls.

6. That's it! Sorbet really is as simple as that.

Homemade sorbet will usually keep for about a month in the freezer before becoming overly icy.
