For the soup:

1 tsp Pearl Powder
1/2 of a baguette, cut into 14 slices
4 fresh figs, sliced into fourths lengthwise
2 pears cored and sliced
8 Tbsp ricotta cheese
1 Tbsp finely chopped chives
1 Tbsp finely chopped parsley
1 Tbsp finely chopped dill
1/4 lemon (juiced)
Kosher salt and fresh ground black pepper to taste
2 tsp butter
1 tsp honey, plus more for drizzling on top
Walnut pieces


Preheat oven to 350 degrees. Arrange baguette slices on two large rimmed baking sheets; brush both sides with oil or butter, and season with salt and pepper.

Bake, rotating sheets halfway through, until golden, 15 to 20 minutes. Let cool on baking sheets.

Meanwhile, in a small mixing bowl, mix together the ricotta cheese, herbs, lemon juice, salt, and pepper until combined.

In a medium sized skillet over medium heat, melt the butter and honey together.

Place the sliced figs and pears in the honey butter and cook for 1-2 minutes per side or until they start to caramelize.

Spread some of the ricotta mixture onto each baguette slice then top with a caramelized fig and pair slices, alternating on each baguette.

Top with chopped walnuts and drizzle with honey.

Serve immediately, and Enjoy!
