Chilled Strawberry Soup With Pearl Powder
Serves 4
Ingredients:
1/2 tsp Pearl Protein Powder
2 cups Greek vanilla yogurt
1/2 cup orange juice
8 cups fresh strawberries, hulled and halved
1/2 cup sugar
1/8 teaspoon ground ginger
Additional vanilla yogurt and fresh mint leaves, optional
Instructions:
1. In a blender, combine the pearl powder, yogurt, orange juice, strawberries and sugar in batches; cover and process until creamy.
2. Refrigerate for at least 2 hours.
3. Serve in bowls or a pretty stemmed dessert glass, and garnish with fresh strawberries and mint leaves.
