Pearl Cucumber Mozzarella Chilled Soup


For the soup:

1/2 tsp Pearl Protein Powder
2 cucumbers (peeled, seeded, & chopped) (about 4 cups)
1 cup unsweetened almond milk
2 garlic cloves
1/2 cups plain Greek yogurt
2 green onion
1 sweet apple (peeled & cored)
juice of 1/2 lime
spring water to thin (optional, if needed)

For the garnish:

Dried Tomatoes
3 Fresh Basil Leaves


Place all soup ingredients into a high speed blender and puree until smooth. Add water or almond milk to thin, if needed.

Transfer to an airtight container and place in the fridge for 1-2 hours.

Once chilled, serve garnished with diced cucumber, dried tomatoes, chunks of Mozzarella, and basil leaves.
